Springtime is the perfect season to reset your home, your office, your college dorm room, and even our diets. We’ve all heard of the yearly act of “spring cleaning,” especially after long winter months of being cooped up (I’m thinking about my East Coast brothers and sisters). As we enter and end Holy Week, I’m also thinking about the acts of fasting and the contemplative state that this spiritual practice brings us. Many of us end up giving something up like chocolate or sweets to grow closer to God. but what can we add? I’d say, BEETS!
Beet root is a versatile vegetable that has many vitamins and minerals and can be incorporated in many different recipes. It has a rich and sweet taste, that adds so much personality to your taste buds. The best parts of beets, are all the health benefits that may come as a result of eating it.
Healthline, a health publication that conducts research on all things related to nutrition, diseases, etc, pointed out in their publication “9 impressive health benefits of beets,” health benefits can include things like reducing inflammation, and improving athletic performance. Most noticed by eaters, is its ability to improve digestive health. This vegetable is loaded with healthy fibers that feeds our gut healthy bacteria which adds bulk to our stool.
We’ve all been in the position of wanting to “detox” and reset our guts from foods that may not land well in our bodies. Beets can help clean your gut and even avoid being constipated. For the person that is not accustomed to eating beets, it can be a little bit intimating getting started with integrating it into a meal. However, the best way to get your tastebuds prepared for this root, and reap the benefits, is making a smoothie!
Jens Pineapple Beet Smoothie
When I first got into the routine of making smoothies to fuel my active days, I started exploring with beets. After years and years of making this smoothie, I think I’ve finally perfected my recipe. I’ve even made it for friends and family, and they’ve eagerly requested that I send them my recipe. Not to toot my horn here, but I’ve never had someone try this smoothie and not absolutely love it- even for first time beet eaters.
This bold fuchsia colored smoothie has a refreshing tropical smell and taste. The pineapple brings out the sweetness of the beet and the almond milk gives it a rich smooth texture. Add some ice on those warmer days, and you will love your life because of its refreshing temperature.
Here is what you’ll need:
- Ninja bullet or your go-to blender
The nutria Ninja (auto IQ) Blender is my personal favorite blender for smoothies that involve high fiber fruits and vegetables, like beets. It has features that allow the device to sense the weight and needs of your blend, so it always creates a perfect blend of extracting the vitamins and minerals of your ingredients. They also come with a lid for easy drinking and storing directly from the blending cup.
I’ve only ever used this blender (and have re purchased it several times to gift to friends and family) so I highly recommend this one!
- Sharp Knife
Usually, I wouldn’t add such an obvious fact, but I think it’s important to note that your regular ole knife that you use to dice onions or slice apples, may give you trouble when cutting a raw beet and the pineapple. Just putting that out there for my beet and pineapple rookies.
Recipe
Prep time: 9 Mins
Blend time: 1 Mins
Total time: 10 Mins
Servings: 2
Ingredients:
- 1 cup diced Raw Beet
- 1 cup Pineapple
- 3 tbs Chia Seeds
- 2 cups Almond milk or water
- ½ cup of Pear
- 3-4 Ice cubs
Method:
- Add your almond milk or water to the blender cup and chia seeds.
Allow your chia seeds to soak in the liquid for at least 9 minutes.
- Dice up your raw beets
Note: It is best to consume beets raw so that the vitamins and minerals are not loss by cooking. Measure 1 cup.
- Cut your pineapple
The best way to do this it by first laying the pineapple on its side and cutting both ends. Then, you’ll stand the pineapple back up and cut through the edges. Once you’ve cleared out the pineapple skin, you’ll want to lay it back on its side and slice the fruit on its side.
